Hemp Tacos Recipe With NexVeg

Weeknight meals can get a little hectic because time is usually limited. The last thing anyone wants to do is spend hours preparing and cooking dinner, while racing the clock to get to bed for the next work day.

Tacos are a simple way to cut time without compromising taste. And let’s face it, I am pretty sure no one can turn down a plate of tacos.

This is a very simplistic recipe with minimal steps. This combo is very versatile as well. If you want to keep it lower carb simply leave out the tortillas and add more vegetables. Or if you don’t want to fuss with making individual tacos for everyone, lay down some tortilla chips on a serving platter and pile on the NexVeg™crumble and slaw for a family style serving of nachos.

This recipe is perfect for the whole family and all you need is a frying pan, food processor, and 20 minutes.

Let’s talk about an underrated ingredient that can be easily added into so many different dishes - Cabbage, and the health benefits of cabbage.

The cabbage benefits go on and this special veggie has proven itself to be quite the MVP. So for the sake of tacos and health- let’s throw some yummy, crunchy cabbage on this recipe!


Servings: 4

Prep Time:15 minutes 

Total Time: 20 minutes

Contains: tree nuts.

 

Ingredients: 

  • 1 pack  Nexveg™ patties 

  • 8 white corn tortillas

Jalapeno Lime Coleslaw Ingredients:

  • 1 (14 oz ) bag coleslaw mix

  • ¾  cup plain unsweetened almond greek yogurt

  • 1 jalapeno, stemmed and cored

  • ¼ cup fresh cilantro 

  • 1 garlic clove

  • 2 tbsp. lime juice

  • ½ tsp. ground cumin

  • ½ tsp. chili powder

  • Salt and pepper to taste

Directions:

  1. In a saute pan over medium heat, cook patties and break them with your spatula until crumbled. 

  2. While patties brown, make your coleslaw dressing. Add all coleslaw ingredients, except coleslaw mix, to a food processor or high powered blender. Blend on high until all ingredients are well combined and smooth.

  3. In a medium bowl, add coleslaw mix and pour dressing on top and mix until coleslaw is fully coated.

  4. Warm tortillas according to the package. Add NexVeg™ crumble, coleslaw, along with your favorite taco toppings!

  5. Enjoy!
