Easy Creamy Vegan Ramen With Garlic

During the winter season, two words usually come to mind when we are searching for dinner ideas: easy and comforting. For us, a hot bowl of vegan creamy ramen is at the top of that quick comfort food list. Believe it or not, how you make it determines how well it helps fight off that persistent cold & flu season....

Ramen can be made in a variety of ways which makes it a versatile dish and also a great blank slate for adventurous foodies. While traditionally it is made with chicken or pork stock, why not try a garlic-based vegan ramen and extract the extra health benefits as well as the flavor.

NOTE: Raw garlic is widely known for being antiviral.  It contains Alicin which is an amino acid known to reduce inflammation and offer antioxidant benefits.  What most people are not aware of is that it needs to be stay in raw form or even semi-cooked to reap the benefits. Once over-cooked it actually loses the beneficial allicin which contains the antiviral portion.

Why Is Garlic Good For You? 

Garlic has a bold flavor that is low in calories (about 4 calories per clove), sodium, and fat. The benefits of garlic go beyond that with important minerals including potassium, magnesium, zinc, and even calcium!

Garlic has been used for centuries by many cultures as a flavor ingredient and medicine because sometimes the best food is also medicine. Most of us have heard how garlic helps heart health and lower cholesterol, but did you know garlic’s antiviral properties can help keep us happy and healthy during the winter and flu season? Some of the other health benefits of eating raw garlic include fighting bacterial infections, such as the common cold, viral infections, and even parasites! Garlic is both healing and delicious. 

Although garlic has been used as medicine for centuries garlic as an antiviral is being put to the scientific test. The Mayo Clinic recently conducted a study about garlic and stated, "preliminary reports suggest that garlic may reduce the severity of upper respiratory tract infection." In another study published in American Family Physician about the “Treatment of the Common Cold in Children and Adults” reported that "Prophylactic use of garlic may decrease the frequency of colds in adults, but has no effect on duration of symptoms."

How To Eat Garlic For Your Health? 

Eat 2-3 cloves of raw or lightly cooked garlic either in dishes like in a delicious creamy vegan ramen or even as a tea to help relieve a stuffy nose, build your immunity, and protect your heart.

  • 1 Nexveg™ patty 

  • 2 tsp. garlic, minced

  • 2 tsp. ginger, grated

  • 1 cup shiitake mushrooms, chopped 

  • 4 cups of water

  • 2 vegan bouillon cubes 

  • 2 tbsp. tamari

  • 1 tbsp. maple syrup 

  • ½ cup light unsweetened coconut milk, canned 

  • 6 oz. dried ramen noodles 

  • salt to taste


  1. Preheat oven to 425F. Cut the patty into thirds both vertically and horizontally to create 9 cubes. Place them on a parchment lined baking sheet and set aside.

  2. In a large non stick saucepan over medium heat, add ginger, and 2 tbsp. of water. Saute for a few minutes until fragrant. 

  3. Add chopped mushrooms and 2 tbsp. of water into the saucepan. Saute for 5 minutes until the mushrooms start to brown.

  4. Pour in water and raise heat to bring to a boil. Once water is boiling, add bouillon cubes until dissolved. Pour in tamari, maple syrup, and coconut milk. Reduce heat to a low boil and let simmer for 10 minutes. 

  5. While the broth is simmering, bake patty in the oven for 10 minutes.

  6. Add dried ramen to the broth and let cook for 3 minutes until noodles are soft. Stir in garlic and salt to taste.Remove from heat and divide ramen into 2 bowls. Top with Nexveg™ cubes and your other favorite ramen toppings.
